With an expert’s touch Barbara evenly sweeps milky white batter around a piping hot griddle and in a matter of seconds it has started to curl around the edges into a lovely, golden crepe. A spatula in one hand and a flat paddle in the other, she swiftly lifts the paper-thin pancake and flips it. Then, working swiftly, she layers on slices of serrano ham and cheese, gently folds the masterpiece once and then once more, and then slips the final masterpiece onto a plate and hands it to the lucky recipient.
This little dance, taking only moments to complete, is repeated time and again at La Creperia in the AC South Park. Of course the fillings vary from savory to sweet, and the crepes can be dolloped with whip cream or perhaps drizzled with chocolate depending on what you fancy, but the outcome is always the same…delicious.
